So I can't turn my laptop into a gaming pc, but can I change the RAM & HDD?
It's a Lenovo ThinkPad X1 Carbon. I want to upgrade the RAM to 16 GB and the HDD to 2 TB.

Yes, you can change ram and HDD to larger ones, but that will not likely affect your gaming performance at all…
Gaming is mostly dependent on the video system, and in most cases, you can't upgrade laptop video - you are stuck with what you have.
